Bengal gram is commonly known as 'Kala chana' in hindi. It is a part of the vegetarian diet in India. Bengal gram's 'desi' variety comprises of darker smaller seeds having a rough outer covering.
Bengal gram or kala chana is very popular in northern India. It is also very unique as it can take multiple avatars and each avatar is different in its taste and effect on the body. It can be sprouted and simply put into salad or cooked as curry. Split Bengal gram or Chana dal tadka is very famous in northern India. It can also be grinded (besan) and used for making pakodas. Interestingly, roasted Bengal gram is a diet in itself. It is used by many people during travel & work (as safe and highly nutritious food), sometimes at home with a dressing of onion, green chilli and tomato.
Kala Chana is very high in protein and provides a nutritional meal. It has a low glycaemic index and is a good protein option for people with Diabetes.Bengal gram avoids & cures acidity, constipation, blood pressure.Being low in fat, high in dietary fibre and rich in vitamins and minerals, Bengal gram can indeed be a healthy addition to your diet.
Ÿ Note: Please soak for at least 4-7 hours beforecooking in order to achieve optimum flavour and texture. It's possible to identify whether soaking has finished or not. They are soaked when they can be split easily between the fingers. Health wise, it's better to use sprouted Bengal gram in salad.
